Zesty Sautéed Kale with Garlic

Ingredients
2 bunches Kale
2 tablespoons Olive oil
3 cloves Garlic, minced
Salt and pepper to taste
Splash of red wine vinegar
1 teaspoon Orange zest

Step by Step Instructions
  1. Chop the kale into 2-inch squares. Heat a large, deep skillet over medium-high heat. Add the oil and heat through until just starting to move in the pan. Add garlic and sear quickly, coloring to a pale golden color, but do not brown or char. Add the greens and toss to coat; season to taste with salt and pepper. Cook together, tossing occasionally, 2 to 3 minutes, or until the kale has just wilted and is tender. Drizzle with the vinegar and add the orange zest. Toss together and serve immediately.
