Breakfast Stuffed Peppers

Vegetarian!

Ingredients
1 Bell pepper (halved and seeds removed)
1 tablespoon Cheese of your choice
2 tablespoons Diced tomato
1/4 of a Green onion (diced)
OR scallion
1/2 teaspoon Salt
4 medium-sized Eggs
1 tablespoon Pesto
Additional vegetables such as:
Mushrooms
Spinach
Onion
Chives
Zucchini
and/or Jalapenos
Parsley for garnish

Step by Step Instructions
  1. Cut the bell pepper in half and remove the innards and seeds. Sprinkle the cheese into the empty areas.
  2. Finely dice the tomato and the green onion/scallion, then add both to the pepper halves. You may also add other vegetables if you desire.
  3. Whisk the eggs, salt, and pesto together in a bowl, then fill each pepper half with the mixture.
  4. Gently transfer the pepper halves to an air fryer and fry for 18 to 20 minutes at 370. Garnish with parsley, then serve.
