Spicy Succotash

Vegetarian!

Ingredients
1 tablespoon Vegetable oil
2 or 3 tablespoons Butter (divided)
1 large Red onion
1 large Bell pepper (chopped)
OR a jalapeno pepper
4 cloves Garlic (minced)
3 cups Corn kernels
Salt & pepper to taste
1 1/2 pounds Butter beans
1 cup Cherry tomatoes (sliced)
2 tablespoons Fresh chopped basil
And/or other fresh herbs
Additional vegetable suggestions include:
Okra
Potatoes
Turnips
Celery
Greens
Carrots

Step by Step Instructions
  1. Heat the vegetable oil and 1 tablespoon of butter in a large pan over medium heat and swirl them together. Add the pepper and onion and cook for 5 minutes. Add the garlic and let cook for 1 minute.
  2. Add the corn, butter beans, salt, and pepper and cook stirring for 5 minutes.
  3. Add the tomatoes, basil (and/or other herbs), and if desired the remaining butter, stir together and let cook for 1 minute then serve.
