Steak with Balsamic Gooseberry Sauce

Ingredients
2 tablespoons Butter
1 Onion (diced)
1 tablespoon Flour
1/2 cup White wine
1 cup Chicken stock
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Balsamic vinegar
1 1/2 cups Gooseberries (peeled)
4 T-bone steaks (bone in)
Salt & pepper
1 tablespoon Butter

Step by Step Instructions
  1. Melt the butter in a large saucepan, then add the onions. Cook them until the are soft, then add the flour and cook until it has just browned.
  2. Add the white wine, chicken stock, salt, and pepper and let the mixture simmer for 5 minutes. Add the vinegar and gooseberries and let simmer for 3 more minutes. Set the mixture aside and keep it warm.
  3. Dry the steaks gently with a paper towel and season them with salt & pepper.
  4. Heat a cast iron pan on the stove over medium-high heat and melt 1 tablespoon of butter in the pan. Sear the steak for 2 minutes on each side. If it needs more time to suit your preferences, cook for 30 second intervals on each side until it is to your liking.
  5. Plate the steaks and pour the gooseberry sauce over them.
