Cheesy Zucchini Saute

Vegetarian!

Ingredients
1/2 cup Onion (chopped)
1/4 cup Butter (cubed)
3 cups Shredded zucchini
2 teaspoons Fresh basil (minced)
1/2 teaspoon Salt
1/8 teaspoon Garlic powder
1 cup Shredded cheddar cheese
1 cup Tomato (diced)
2 tablespoons Sliced ripe olives
Bread for serving (optional)

Step by Step Instructions
  1. Using a large skillet, saute the onion in the butter until it is crisp-tender. Stir in the shredded zucchini, the basil, salt and the garlic powder. Cook stirring for 4 to 5 minutes.
  2. Add the cheddar cheese, tomato, and olives. Cover, then cook for 4 to 5 minutes.
  3. Serve as a side or over bread.
