Sweet Potato Hash with Ground Turkey

Ingredients
1 tablespoon Olive oil
1 tablespoon Garlic (minced)
1 Onion (diced)
1 pound Ground turkey
2 Sweet potatoes (peeled and cubed)
1 Bell pepper (diced)
2 teaspoons Chili powder
1/4 cup Parmesan cheese
1 teaspoon Dried parsley (store bought or homemade)
Salt & Pepper to taste
4 Eggs (optional)

Step by Step Instructions
  1. Preheat your oven to 425 degrees. Using a cast iron skillet, saute the onion and garlic in olive oil until they soften.
  2. Add the ground turkey to the skillet and brown it, then stir in the bell pepper, sweet potato cubes and chili powder.
  3. Place the skillet into the oven and bake for 20 minutes. If desired, you may also crack eggs over the top before baking.
  4. Remove the hash from the oven and top with Parmesan cheese, parsley, salt, pepper, and, if desired, additional chili powder. Return the hash to the oven just long enough for the cheese to melt, then remove it and serve.
