Sweet Potatoes au Gratin

Ingredients
2 Sweet potatoes (peeled and sliced 1/4 inch thick)
1 Egg
2 cups Heavy whipping cream
3/4 teaspoon Salt
1/8 teaspoon Ground nutmeg
Pepper to taste
3 tablespoons Grated Parmesan cheese
Minced fresh thyme (optional)

Step by Step Instructions
  1. Place the sweet potatoes in a greased 8 inch square baking dish and set aside. Beat the egg in a bowl, then add cream, salt, nutmeg, and pepper and mix them together.
  2. Pour the egg mix over the sweet potatoes and sprinkle with cheese. Bake uncovered for 40 to 45 minutes.
  3. Sprinkle with thyme (if using), and serve.
