Carrot Cake

Vegetarian!

Ingredients
1 cup All-purpose flour
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon Cinnamon
1/2 teaspoon Salt
2/3 cup Vegetable oil
1 cup Sugar
2 Beaten eggs
1/2 cup Chopped nuts and/or raisins (if desired)
1 1/2 cups Grated carrots

Step by Step Instructions
  1. Allow ingredients to reach room temperature and preheat oven to 325 degrees.
  2. Sift flour before measuring, then resift with the baking soda, baking powder, cinnamon, and salt
  3. Mix the vegetable oil, sugar, and eggs together and add this mixture to the dry ingredients.
  4. Add the grated carrot and the nuts/raisins if you are using them.
  5. Once the batter is well mixed, bake it for about an hour and 25 minutes in an 8-inch square pan that has been greased and floured.
