Cauliflower "Fried Rice"

<p>I don&#8217;t eat any grains but fried rice has always been a favorite food. This is my own variation of cauliflower fried rice. What I use changes depending on what&#8217;s available. <span class="caps">ALL</span> my ingredients are either locally sourced or organic. Adjust seasonings to taste. I used black pepper, cayenne pepper, garlic powder, dehydrated, cubed ginger</p>

Ingredients
1 Whole Chicken
2 Cups Sugar snap peas
1 Cup Carrots
2 lbs Cauliflower florets
1 bag Broccoli florets
1/4 Cup Extra Virgin Olive Oil
1/4 Cup Tamari Sauce
1 Whole Onion
1 Bunch Garlic Scallions
1 Tbs dehydrated ginger
3 whole Eggs

Step by Step Instructions
  1. Bake and remove meat from 1 approx 3lb chicken
  2. In a food processor, pulse cauliflower, broccoli, carrots to about the size of rice. Cauliflower "rices" better semi-frozen.
  3. Place all ingredients in large bowl. Add Tamari sauce, spices, olive oil and mix well.
  4. Place in large roasting pan and roast at 375 F for about an hour, stirring every 20 minutes or so. Bake until vegetables soft.
